Last weekend I had lunch with
khalinche at a cafe in Archway, and was very impressed with their beetroot fritters with smashed avocado. Last night I decided to try and reproduce them, since I had a visiting
hjdoom, and they fit his vegan, gluten-free diet. I used 3 red onions, finely chopped, 4 large potatoes coarsely grated, and 1 pack of pre-cooked beetroot, finely grated, added a bit of salt and pepper and about half a teaspoon of toasted fennel seeds. I then formed the mix into patties (a good handful), and cooked them in about a cm of sunflower oil. About half the mixture made four good sized fritters, and I topped them with about half a pear's worth of smashed avocado each, and served them with roast fennel (tossed in olive oil and in the oven for about 20 minutes at 200C). They came out delicious. Next time I'll probably increase the beetroot and decrease the potato, add about three times as much fennel seed, and possibly add a bit of gram flour (they held together surprisingly well with no binding agent, but I feel as though I might have just got lucky).
In amongst the cooking we watched the football, which was a first for me - as in, the first time I've ever watched a game from start to finish. I enjoyed it on the level where I pretty much always enjoy doing something new, especially with someone enthusiastic explaining things to me, and I think I understand other people's appreciation for the sport a bit better than I used to, but I probably won't seek it out again. I found myself surprisingly and anxiously invested in the result, and it wasn't the fun kind of tension. It's possible that that's just because we lost, but I was reflecting as we watched and thought at the time that even if we went on to win, the process wasn't terribly pleasant for me. It was good to see the grace with which the nation seems to have responded to losing - I don't think I would have predicted that, but sometimes it's good to be wrong.
